According to Ayurvedic medicine spring time is kapha aggravating. In other words, this is the time of year when sinus congestion and puffiness can plague the best of us. Ginger strengthens the body’s ability to digest accumulated ama or toxicity. Sweet potatoes are light and yet also dense enough to add substance to your meal. The bitterness of kale is another kapha balancing food that helps remove puffiness and is great for weight loss.
Ingredients:
3/4″ fresh ginger
1/2 large bunch organic kale
1/2 tsp sea salt
1 TBSP avocado oil
2 cups sweet potatoes diced
Directions:
Steam the kale until the leaves turn a brighter shade of green.
Roast the sweet potatoes coated in avocado oil and sea salt in a 375 degree F oven until fork tender.
Grate and sauté the ginger in avocado oil for thirty seconds. Then add cooked sweet potatoes and kale. Mix gently to avoid breaking up the soft sweet potatoes.
