
My daughters use an air fryer for most of their cooking these days. I have been slower to adopt this miraculous little machine. However, after making these little yummies I was hooked!
INGREDIENTS
- 1 small head organic cauliflower
- 2 TBSP olive oil
- 1/2 cup cassava flour
- 1/2 tsp sea salt
- 1/2 tsp garlic powder
- ¼ tsp paprika
- ¼ tsp ground cumin
- 3/4 cup carbonated water
- 1 – 1.5 cups panko pork rinds
INSTRUCTIONS
- Wash and chop the cauliflower into small bite sized pieces.
- Drizzle the cauliflower chunks with olive oil, making sure they are thoroughly coated.
- Combine the cassava flour, spices, salt, garlic powder and carbonated water in another bowl. Use the carbonated water to create a pourable consistency.
- Add the pork panko into another shallow dish.
- Dip the cauliflower chunks into the liquid mixture and then into the pork panko, making sure the cauliflower is thoroughly coated.
- Only cook half the florets in the air fryer at a time at 400F for 12 minutes. Turn them once halfway through and then cook the other half.
- Serve immediately with the cilantro lime dipping sauce or enjoy them on their own. Delicious!
Cilantro Lime Dipping Sauce
- 1 avocado
- 1/4 cup cilantro, finely chopped
- 2 TBSP water
- 1.5 TBSP freshly squeezed lime juice
- 1 clove garlic, crushed
- 1/2 tsp sea salt
- 1 TBSP olive oil
Combine avocado, cilantro, water, freshly squeezed lime juice, crushed garlic, sea salt and olive oil in blender and blend on high speed until smooth. You can change the consistency with more water or olive oil as you wish.
